A Scrumptious Mess

So if you’ve been reading any of my recipes then you’ll know that I’m not into cooking as a performance. Don’t get me wrong, I love cooking and I luuurve food. But I’m a mum of two with little patience and even less time. That’s why every recipe you find here is more than likely gonna take less time to prepare than it would to order take-out. However, I still like to impress. So I want food that’s easy to make but looks and tastes great. Basically, I want maximum glory for minimum fuss. But be honest, who doesn’t? So if like me you want something to impress the guests without causing you any stress, then try this easy flourless chocolate cake.
Step by step
This cake may not be the prettiest creation, but it’s what it tastes like that counts! Plus it is dead easy and quick to make, so zero complaints from me. It is gluten free so is perfect for people who are intolerant. Serve warm with ice cream or whipped cream, or simply dusted with icing sugar.
Serves: 8 – 10
120g dark chocolate
150g caster sugar
50g cocoa powder
3 eggs, beaten
1 teaspoon vanilla extract
Preheat the oven to 150 C / Gas 2. Grease a 20cm round cake tin, and dust with cocoa powder. In the top of a double boiler over gently simmering water, melt chocolate and butter. Remove from heat, and stir in sugar, cocoa powder, eggs and vanilla. Pour into prepared cake tin. Bake in preheated oven for 30 minutes. Let cool in tin for 10 minutes, then turn out onto a wire rack and cool completely. Slices can also be reheated for 20 to 30 seconds in the microwave before serving.
I served my cake covered with lashings of warmed chocolate sauce for extra naughtiness, yum!
